Cooked Meat Medium

 

Use: Cooked Meat Medium is used for cultivating anaerobic microorganisms and for stock culture maintenance.

Description: The solid meat granules in the broth medium provide favorable growth conditions for anaerobic microorganisms due to the reducing action of the sulfhydryl groups of the muscle proteins. The cooked (denatured) protein makes these groups more readily accessible. This medium can be used to differentiate saccharolytic from proteolytic Clostridium sp. Saccharolytic species rapidly form acid and gas without digesting the meat. Proteolytic species break down the meat (blackening) to amino acids and form sulfur compounds (putrid smell). APHA and ACAC recommend Cook Meat Medium for the recovery of Clostridium botulinum from foods. Hulman recommended this medium for stock cultures.
